Turkey Meat Loaf

1 1/2 lbs. ground turkey
3/4 cup regular Quaker oats
3/4 cup finely chopped onion - lightly sauted
1 large carrot, grated
1 zucchini, grated
2 cloves garlic, minced
1/2 cup tomato sauce
1 egg, beaten lightly
1 T. Bill’s Best Beaf (Whole Foods)
1/2 t. salt
1/4 cup olive oil
3/8 cup feta cheese

Heat oven to 395 degrees. Saute the onions. Combine all ingredients in a large bowl. Bake 1 hour or until meatloaf is 170 degrees in center. Serve with tomato sauce, guacamole, salsa etc.
